RECIPE:
Peach Flambé

SERVES: 4
INGREDIENT: 4 tbsp. butter,
8 peach half's (can be from cans or fresh), 1 cup brown sugar, 1/4 cup
brandy, 1/4 liter cream, vanilla ice cream.
DIRECTION: Melt butter in pan, add
sugar, stir to mix until sugar is melted, add peach half's, sauté for a
couple of minutes. Add brandy, allow to heat, ignite (flambé) until
brandy is
burned out, then take the peach half's out of the pan on some pre warmed
plates. Add the cream to the pan and stir until the sauce thickens a
bit, then serve over the peaches and add vanilla ice cream.
NOTES:

Granish with orange slices,
cherries and
whipped cream.

This
same recipe can also be done using pine apple slices or apricots
instead of the peaches.

The
vanilla ice cream, even do its a classic, can also be substituted
with any other of your favorite ice creams as long as the flavors
complement each other.

Instead of brandy other liqueurs like cointreau, grand marnier or
similar can be used also.
