RECIPE: Cold Lobster with Green Tartar

INGREDIENT: Cold (precooked) lobster,
sauce: a small bunch of parsley, 1 cup mayonnaise, 2 teaspoons chopped
capers, 1 table spoon finely chopped celery, 1 tablespoon chopped chives,
(optional chopped
boiled egg), salt, pepper.
DIRECTION: Rinse the parsley and chop
very finely. Dampen a corner of a clean dish cloth with water and place
parsley in that corner. Squeeze out the juice into the mayonnaise. Add the
other ingredients and mix well. Serve separately with lobster.
