RECIPE: Vichyssoise
- Cold Potato Leek Soup

INGREDIENT:
2 leeks
and 1 onion all chopped, 2 tablespoons butter, 3/4 cups potatoes, peeled
and thinly sliced, 2 1/3 cups chicken broth, Salt and Pepper to taste, 1
cup cream, fresh chives minced.
DIRECTION: Sauté
leek and onions in butter until the onions become transparent (about 5
minutes), then add the potatoes and stock to the saucepan. Salt and
pepper to taste. Bring to a boil, reduce heat and simmer very gently for
30 minutes.Puree in a blender or food processor until very smooth. Cool.
Gently stir in the cream before serving and garnish with fresh snipped
chives.
NOTES: Serve immediately
with some fresh country style bread. This makes a great meal in the hot
summer season.
