RECIPE: Shrimps Risotto

RECIPE: Shrimps Risotto ( Risotto is a traditional Italian rice dish.)

INGREDIENT: One finely chopped onion, chive finely chopped, one garlic finely chopped, 400 grams of small, fresh and cleaned shrimps,  butter, saffron, 1 cup of rice, 3 cups of consommé, 2 spoons of white wine, 1/2 spoon of olive oil, salt and pepper to taste.

DIRECTION:  Simmer the chopped onion and chive in some olive oil in a pot, add the rice and mix well. Heat up the consommé separately and add the saffron, the very hot stock is gradually added in small amounts while stirring gently, almost constantly: stirring loosens the starch molecules from the outside of the rice grains into the surrounding liquid, creating a smooth creamy-textured liquid. Let the consommé get consumed by the rice, add the white wine and mix again until the liquid gets consumed. Simmer the cleaned shrimps in butter for a minute (until they turn red) then add them to the rice, keep adding the last cup of consommé and let simmer slowly until all the liquid gets consumed, add salt and pepper to taste. Serve hot.
