RECIPE:
Chopped Pork Ticinese Style

INGREDIENT:
400 grams of lean pork meat cut in small stripes or cubes
(pork meat can be from the pork fillet), 200 grams of diced tomatoes, 20 grams of
olive oil, 2 tbsp flour, 1 finely minced onion and some finely minced
garlic, salt, paprika & pepper to
taste, 1 cup red wine, 1 cup meat bouillon, 1 tbsp
minced parsley, 100 grams of grated Swiss cheese.
DIRECTION:
Season the meat with some salt, pepper and paprika, then flour the meat,
Sauté
in olive oil first the onions with the garlic for half a minute
then add the meat and let
simmer
for a few minutes, the take the meat out of the pan and rest it on a
plate, in the pan add the red wine, then the meat bouillon and the diced
tomatoes, and let
simmer
for a few minutes then add the meat again and heat up, check and if
necessary add some more salt and pepper, last top with the minced parsley.
Serve the grated cheese separately so each guest can sprinkle some over
the meat or polenta.
NOTES:
Serve with Polenta
or mashed potatoes and a good red wine.
