RECIPE:
Lentil
Soup
CATEGORY:
Soup
COUNTRY: France
SERVES:
6
INGREDIENT:
bag of
lentils, 1/2 head of garlic, salt, ground black pepper, 3 bay leaves,
stalk of celery, chopped, 3 tablespoons of olive oil, 1
tablespoons of a cup of vinegar, slices of your preferred sausage.
DIRECTION:
Check and
clean the lentils, fill up a large pot of water almost all the way, put
4-5 pieces of garlic into the pot, put the bay leaves into the pot,
place the pot on high heat, pour the lentils into the pot and leave the
pot slightly uncovered, allow the water to come to a boil and from
there, leave the lentils in for anywhere from 15 to 45 minutes,
depending on the type of lentil.
Check the lentils periodically for hardness. When they are soft but not
yet coming apart, they are ready. Remember about 10 to 15 minutes before
you take the pot off of the stove, pour in the vinegar, the olive oil
and a teaspoon or two of salt and some ground black pepper. Stir all of
these into the soup and allow to simmer for a few more minutes.
NOTES: Serve some country style bread.
