RECIPE: Cream of
Pumpkin Soup

INGREDIENT:
2 cups of boiled and pureed pumkin, 1/2 cup chopped onion, 1/2 teaspoon white
sugar, salt, ground black pepper, 2 tablespoons Butter, 2 tablespoons
all-purpose flour, 2 cups cream.
DIRECTION:
Heat the
butter and add the chopped onions until they become glassy clear, then
add the flour and sugar and mix well, add the cream and mix well again
and heat it up, add the pureed pumpkin and mix again let it
simmer for
about 4 minutes, add salt and pepper to taste and serve hot. Optional: Top the soup
with a bit of shipped cream and sprinkle some finely chopped parsley over it.
NOTES: Serve
wit fresh country style bread.
