RECIPE: Chicken Cordon

(This is basically the same as Chicken Cordon Bleu but chicken breast
are filled with sautéed spinach instead of ham and cheese)

INGREDIENT: 2 deboned
and clean breast of chicken, salt & pepper, Milk, 2 eggs, bread crumbs,
sautéed spinach (fresh spinach sautéed with some finely minced onions
and garlic). Plus good quality fresh oil to fry the chicken
breast.
DIRECTION: Make a deep
cut in each of the chicken breast's and fill them with the sautéed
spinach, then close the cut, Mix eggs, salt, pepper, milk in a bowl. Dip
breast in mixture, then in bread crumbs and
fry in pan (quickly) until
brown on both sides.
NOTES: Serve with
French fries and/or fresh mixed salad and
garnish with a slice of lemon.
