Batter Fried Jumbo Shrimps

INGREDIENT:
20 big jumbo shrimps, one lemon, parsley, 3 soup spoon of olive oil,
fresh oil to fry the shrimps, salt and pepper to taste. For the
batter: 250 grams of flour, 2 soup spoons of oil, 1 cup of warm water, 2
egg whites, salt.
DIRECTION:
De vein and clean shrimps, salt and pepper the shrimps, sprinkle the
lemon juice over them and the 3 soup spoons of olive oil and let them
marinate in the refrigerator for about hour. then prepare the
batter who also need about 2 hours of rest. Make a space in the middle of
the flour, add the salt and oil and then mix well with the warm water.
As mentioned let it rest 2 hours in the fridge. Then heat up the oil and
pass the jumbo shrimps trough the batter and
deep fry on high heat. The
batter should be golden brown and crispy, let dry on a paper towel and
serve immediately, decorate the dishes with some lemon slices and serve
with a good tartar sauce on the side . Serve immediately.
Sauce
Tartar:
INGREDIENT: Mayonnaise, 1 chopped boiled egg, finely chopped dill
pickles and some fresh garden herbs.
DIRECTION: Mix all ingredients, serve the sauce cold and separately
on the side.
Note:
Serve with some boiled potatoes or French fries and a nice dry white
wine, like for example a Chardonnay, Sauvignon blanc, Macon Village etc. |
