Green Pea
Soup

INGREDIENT:
800 grams
dried green peas, 1 piece of smoked bacon, 1 and 1/2 liter boullion, 1
onion, finely sliced, Salt and pepper, 1 carrot, diced, 1 leek green
part cut in pieces, mixed herbs. 2 dl of cream.
DIRECTION:
Wash
the green peas and soak them in water for 30 minutes. Combine all
ingredients in a large soup casserole and bring to a boil. Boil for a
couple minutes then reduce the heat. Cover and simmer for about 1 1/2
hours, stirring from time to time. Remove pork fat; run soup through
blender, add the cream reheat and adjust seasoning.
Optional: Add some sausage slices and serve with country style
bread.
